- 4 medium sweet potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup fresh spinach, chopped
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 teaspoon paprika
- 1/4 teaspoon nutmeg
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the sweet potatoes, prick them with a fork, and rub with olive oil, salt, and pepper.
- Bake the sweet potatoes for 45-60 minutes until tender.
- In a skillet, melt butter over medium heat, add spinach, and cook until wilted.
- Remove spinach, add garlic to the skillet, and sauté until fragrant.
- Add heavy cream, paprika, and nutmeg, stirring continuously until smooth.
- Combine the spinach back into the sauce and mix well.
- Cut open the baked sweet potatoes, fluff the insides, and spoon the creamy sauce over them.
- Garnish with fresh parsley and serve.
