Ingredients

  • Salt and pepper to taste

  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef short ribs generously with salt and pepper.
  2. Heat vegetable oil in a large Dutch oven over medium-high heat and sear the ribs on all sides until browned.
  3. Remove the ribs and set aside.
  4. Add chopped onion, carrots, and celery to the pot and sauté for 5-7 minutes until softened.
  5. Add minced garlic and cook for an additional minute.
  6. Stir in tomato paste and cook for 2 minutes.
  7. Pour in red wine, scraping the bottom of the pot, and let it simmer for 5 minutes.
  8. Return the short ribs to the pot and add beef broth, thyme, bay leaves, and Worcestershire sauce.
  9. Bring to a gentle simmer, cover, and transfer to a preheated oven at 325°F (163°C).
  10. Braise for 2.5 to 3 hours until the meat is tender and falling off the bone.
  11. Remove from the oven, let rest for a few minutes, discard bay leaves, and serve garnished with parsley.
