- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 teaspoons fresh thyme leaves
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
- Fresh parsley, chopped (for garnish)
Instructions
- Season the beef short ribs generously with salt and pepper.
- Heat vegetable oil in a large Dutch oven over medium-high heat and sear the ribs on all sides until browned.
- Remove the ribs and set aside.
- Add chopped onion, carrots, and celery to the pot and sauté for 5-7 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Stir in tomato paste and cook for 2 minutes.
- Pour in red wine, scraping the bottom of the pot, and let it simmer for 5 minutes.
- Return the short ribs to the pot and add beef broth, thyme, bay leaves, and Worcestershire sauce.
- Bring to a gentle simmer, cover, and transfer to a preheated oven at 325°F (163°C).
- Braise for 2.5 to 3 hours until the meat is tender and falling off the bone.
- Remove from the oven, let rest for a few minutes, discard bay leaves, and serve garnished with parsley.
