Ingredients
Ingredients:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups broccoli florets
- 12 oz pasta (penne, fettuccine, or your choice)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
Preparation:
Step 1: Cook the Pasta and Broccoli
Cook the pasta according to the package instructions. In the last 2 minutes of cooking, add the broccoli florets to the pot. Once the pasta is al dente and the broccoli is tender, drain the mixture and set aside.
Step 2: Cook the Chicken
Heat the olive oil in a large skillet over medium heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Step 3: Make the Creamy Sauce
In the same skillet, sauté the minced garlic for 1-2 minutes until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring the sauce to a simmer and cook for 3-4 minutes, allowing it to thicken slightly.
Step 4: Combine the Ingredients
Stir in the grated Parmesan cheese, letting it melt into the sauce. Add the cooked chicken, pasta, and broccoli to the skillet. Toss everything together to combine and coat evenly with the creamy sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Step 5: Garnish and Serve
Garnish the pasta with freshly chopped parsley for a burst of color and freshness. Serve hot and enjoy!
Notes
Cooking Notes:
- Pasta Alternatives: While penne and fettuccine are great choices, you can use any pasta shape you prefer, such as spaghetti, rotini, or farfalle.
- Vegetable Variations: If you’re not a fan of broccoli, try swapping it for spinach, peas, or even roasted cauliflower.
- Cheese Tips: For an extra cheesy flavor, you can add more Parmesan or even a sprinkle of mozzarella.
