Ingredients
For the Chicken:
- 1½ lbs boneless chicken thighs, cut into small chunks
- 2 tbsp olive oil
- 3 tbsp honey
- Juice of 2 limes
- 1½ tsp chili powder
- 1 tsp garlic powder
- Salt & black pepper to taste
- Cornstarch for light dredging
- Oil for frying
For the Avocado Lime Drizzle:
- 1 ripe avocado
- ¼ cup sour cream
- Juice of 1 lime
- 1 garlic clove
- 2 tbsp chopped cilantro
- Salt to taste
- Splash of water (as needed for thinning)

Instructions
Step 1: Marinate the Chicken
In a mixing bowl, whisk together olive oil, honey, lime juice, chili powder, garlic powder, salt, and pepper. Toss in the chicken chunks, making sure each piece is fully coated. Cover and refrigerate for at least 30 minutes to let the flavors soak in.
Step 2: Lightly Dredge and Fry the Chicken
Once marinated, remove the chicken from the fridge and let it come to room temperature. Lightly dredge each piece in cornstarch — just enough to coat for crispiness.
Heat oil in a deep skillet over medium-high heat. Fry the chicken in batches to avoid overcrowding the pan. Cook each piece until golden brown and cooked through, about 3–4 minutes per side. Transfer to a paper towel-lined plate.
Step 3: Make the Avocado Lime Drizzle
In a blender or food processor, combine the avocado, sour cream, lime juice, garlic, cilantro, and salt. Blend until smooth and creamy. If the mixture is too thick to drizzle, add a small splash of water to loosen it to your desired consistency.
Step 4: Assemble the Tostada Towers
Lay out your tostadas on a serving platter. Top each with a generous layer of crispy honey lime chicken. Drizzle with the avocado lime sauce. Garnish with fresh cilantro and jalapeño slices for that finishing flair.
For a dramatic presentation, you can stack 2 tostadas with a skewer through the center — a true tower!
Notes
To get the crispiest chicken, make sure the oil is hot enough before frying. Avoid turning the chicken too early — let it form a crust for best results. Also, don’t skip the cornstarch — it’s key to that light, crispy texture!
