Preparation:
Step 1: Prepare the Tofu

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
2. Drain the tofu and press it to remove excess moisture. To do this, wrap the tofu in a clean kitchen towel or paper towels, place it on a plate, and set something heavy on top, like a skillet or a stack of books. Let it sit for at least 15-20 minutes to press out as much water as possible.
3. Once pressed, cut the tofu into bite-sized cubes, about 1-inch pieces.

Step 2: Season and Coat the Tofu

1. Place the tofu cubes in a large mixing bowl.
2. Drizzle soy sauce and olive oil over the tofu, then gently toss to coat each piece evenly.
3. Sprinkle the cornstarch over the tofu, tossing it again to ensure an even, light coating. This will help make the tofu crispy when baked.
4. Add a pinch of salt and pepper, adjusting to taste.

Step 3: Bake the Tofu

1. Arrange the tofu cubes in a single layer on the prepared baking sheet. Ensure they are spaced out to allow for even baking.
2. Bake the tofu for 25-30 minutes, flipping halfway through to ensure all sides become golden and crispy.
3. Remove from the oven once the tofu is crispy and golden.

Step 4: Prepare the Creamy Peanut Sauce

1. While the tofu is baking, prepare the peanut sauce by adding peanut butter, soy sauce, rice vinegar, maple syrup, ginger, and minced garlic into a small mixing bowl.
2. Whisk the ingredients together until smooth. Gradually add warm water, 1 tablespoon at a time, until the sauce reaches your desired consistency. It should be creamy but pourable.

1. Once the tofu is done baking, transfer it to a serving plate or bowl.
