For the Burger Patties:

  • 1 lb ground beef (80/20 blend for juiciness)
  • Salt and black pepper, to taste
  • 4 slices cheddar or American cheese

For the Fried Chicken:

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • ½ cup all-purpose flour
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper (optional, for heat)
  • 1 large egg, beaten
  • ½ cup buttermilk
  • Oil for frying

For the Toppings:

  • ½ cup pickled jalapeños, sliced
  • 2 tbsp mayonnaise or burger sauce
  • 1 sesame seed burger bun (use the tops and bottoms of two buns for more stability)

Instructions

Preparation:

Step 1: Prepare the Fried Chicken

  1. Pound the Chicken: Flatten the chicken breasts to an even thickness for consistent frying.
  2. Season: Lightly season both sides of the chicken breasts with salt and pepper.
  3. Coat the Chicken:
    • In a shallow dish, combine the flour, paprika, garlic powder, and cayenne pepper.
    • In another bowl, whisk the egg and buttermilk together.
    • Dredge each chicken breast in the flour mixture, then dip into the egg mixture, and coat again with the flour mixture.
  4. Fry: Heat oil in a deep skillet to 350°F (175°C). Fry the chicken breasts for 4-5 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F or 74°C).
  5. Rest: Place the fried chicken on a paper towel-lined plate to drain excess oil.

Step 2: Cook the Burger Patties

  1. Divide the ground beef into 4 equal portions and shape each portion into thin patties.
  2. Season both sides of each patty with salt and pepper.
  3. Heat a skillet or griddle over medium-high heat. Cook each patty for 2 minutes per side, or until well-seared.
  4. During the last minute of cooking, place a slice of cheddar or American cheese on each patty and allow it to melt.
  5. Stack two cooked patties together with melted cheese in between and set aside. Repeat for the other two patties.

Step 3: Toast the Buns

  1. Butter the inside of the sesame seed buns lightly.
  2. Toast the buns in a skillet over medium heat until golden and crisp.

Step 4: Assemble the Burger

  1. Base Layer: Spread mayonnaise or burger sauce evenly on the bottom bun.
  2. Stack the Beef Patties: Place one double-stacked cheeseburger on the bottom bun.
  3. Add Fried Chicken: Place one fried chicken breast on top of the stacked beef patties.
  4. Top with Jalapeños: Add a generous amount of sliced pickled jalapeños for tang and heat.
  5. Second Chicken Breast: Place the second fried chicken breast on top of the jalapeños.
  6. Top Bun: Spread additional sauce on the top bun if desired and place it on the stack.
  7. Secure: Use a long skewer to hold the burger together.

COOKING Note:

  • Chicken Coating: For an extra-crispy coating, let the dredged chicken rest for 5 minutes before frying.
  • Heat Control: If you prefer a milder flavor, skip the cayenne pepper and use sweet pickles instead of jalapeños.
  • Cheese Choices: Feel free to swap cheddar with pepper jack for a spicier kick or Swiss cheese for a creamier texture.
