Instructions
Begin by bringing a large pot of salted water to a rolling boil. Add the cheese tortellini and cook according to the package directions (usually around 7-9 minutes for refrigerated tortellini). Stir occasionally to prevent sticking. Once cooked, drain the tortellini and set it aside. Drizzle lightly with olive oil to keep it from sticking while you prepare the other components.
While the tortellini cooks, heat a large skillet over medium-high heat. Add 3 tablespoons of butter and allow it to melt completely. Toss in the minced garlic and sauté for about 30 seconds, just until fragrant (be careful not to burn it).
Add the steak bites in a single layer, ensuring not to overcrowd the pan. Sear each side for 2–3 minutes until a golden-brown crust forms and the steak is cooked to your desired doneness—medium-rare to medium is ideal for maximum tenderness. Season generously with salt and black pepper during the searing process.
Once cooked, remove the steak bites from the skillet and set them aside, keeping the flavorful garlic butter in the pan.
In the same skillet (wipe out burnt bits if necessary, but leave any flavorful fond), melt 2 tablespoons of butter over medium heat. Pour in the heavy cream and bring to a gentle simmer, stirring frequently to avoid scalding.
Gradually whisk in the grated Parmesan cheese, stirring continuously until fully melted and the sauce becomes smooth and begins to thicken. Add salt and freshly ground black pepper to taste. Allow the sauce to simmer gently for about 5–7 minutes, stirring occasionally.
Add the cooked tortellini to the Alfredo sauce, folding gently to ensure all pieces are evenly coated. Simmer together for 1–2 minutes to allow the flavors to meld.
Plate the creamy tortellini on serving dishes, then top generously with the seared garlic butter steak bites. Drizzle any remaining garlic butter from the skillet over the top for an extra punch of flavor.
Garnish with chopped parsley or additional Parmesan if desired.
Notes
Cooking Note:
For best results, allow the steak to come to room temperature before searing. This ensures a better sear and more even cooking. Also, don’t overcrowd the pan when searing the steak—work in batches if needed to keep the skillet hot and prevent steaming.
