For the dumplings:
- 1 cup (150 g) self-raising flour
- 30 g unsalted butter, softened
- ⅓ cup (80 mL) milk
- 1 egg, lightly beaten
- 1 tsp vanilla extract
For the syrup sauce:
- 1 cup (250 mL) water
- ¾ cup (260 g) golden syrup
- 30 g unsalted butter
- ¼ cup (55 g) brown sugar
- 1 tbsp lemon juice

Preparation
Step 1: Prepare the syrup
In a large, wide saucepan or deep skillet, combine the water, golden syrup, butter, brown sugar, and lemon juice.
Place over medium heat, stirring occasionally until the butter melts and the mixture begins to simmer gently. Keep the syrup at a low simmer while you prepare the dumplings—it should be hot when the dumpling dough is added.
Step 2: Make the dumpling dough
In a medium mixing bowl, sift the self-raising flour. Using your fingertips, rub in the softened butter until the mixture resembles fine breadcrumbs.
In a separate jug, combine the milk, lightly beaten egg, and vanilla extract. Pour the wet ingredients into the flour mixture and stir gently with a fork or wooden spoon until just combined.
You should have a soft, sticky dough. Be careful not to overmix—this will keep your dumplings light and fluffy.
Step 3: Shape the dumplings
Using lightly floured hands or a spoon, divide the dough into 10–12 even portions. Roll gently into balls if you prefer a uniform look, or simply drop rough spoonfuls into the syrup for a rustic finish.
Step 4: Cook the dumplings
Carefully drop the dumplings into the simmering syrup one at a time, spacing them slightly apart (they will expand as they cook).
Reduce heat to low, cover the pan with a lid, and simmer gently for 15 minutes. Do not lift the lid during this time, as the steam is essential for cooking the dumplings through and keeping them tender.
After 15 minutes, remove the lid and check that the dumplings are puffed and cooked through. The syrup should be slightly thickened and bubbling.
Step 5: Serve warm
Serve the dumplings hot, spooning over plenty of syrup. Top with a dollop of thickened cream, vanilla ice cream, or custard for the ultimate dessert experience.
Garnish with lemon zest or a drizzle of extra golden syrup if desired.
