- 1 cup diced tomatoes (canned or fresh)

Instructions
- Prep your ingredients by peeling and dicing the sweet potatoes, chopping the onion, and mincing the garlic.
- In a large skillet, heat olive oil over medium heat and sauté the onion, garlic, and bell pepper for about 5 minutes.
- Add the ground turkey to the skillet, breaking it apart as it cooks, and season with paprika, cumin, salt, and pepper. Cook until browned (7-10 minutes).
- In a pot of boiling salted water, cook the diced sweet potatoes for about 10 minutes until tender, then drain.
- Combine the cooked turkey mixture with the drained sweet potatoes and diced tomatoes in the skillet.
- Preheat the oven to 400°F (200°C). Pour the mixture into a greased baking dish, sprinkle cheese on top, and bake for 20-25 minutes until the cheese is melted and bubbly.
