  • Salt and pepper, to taste
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients by peeling and dicing the sweet potatoes, chopping the onion, and mincing the garlic.
  2. In a large skillet, heat olive oil over medium heat and sauté the onion, garlic, and bell pepper for about 5 minutes.
  3. Add the ground turkey to the skillet, breaking it apart as it cooks, and season with paprika, cumin, salt, and pepper. Cook until browned (7-10 minutes).
  4. In a pot of boiling salted water, cook the diced sweet potatoes for about 10 minutes until tender, then drain.
  5. Combine the cooked turkey mixture with the drained sweet potatoes and diced tomatoes in the skillet.
  6. Preheat the oven to 400°F (200°C). Pour the mixture into a greased baking dish, sprinkle cheese on top, and bake for 20-25 minutes until the cheese is melted and bubbly.
