  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • ¼ cup soy sauce (use low-sodium if preferred)
  • 3 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp sesame oil
  • 1 tsp sriracha or chili flakes (optional, for heat)
  • 2 tbsp cornstarch (for coating the chicken)
  • 2 tbsp vegetable oil (for frying)
  • 1 tbsp sesame seeds (for garnish)
  • 2 green onions, finely sliced (for garnish)

Instructions

Preparation:

Step 1:
In a bowl, toss the bite-sized chicken pieces with cornstarch. Ensure that each piece is evenly coated. This will give the chicken a nice crispy exterior when fried and will help the glaze adhere better later on.

Step 2:
Heat vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer, making sure not to overcrowd the pan. Fry the chicken pieces for about 5-6 minutes, turning occasionally, until they’re golden brown and cooked through. You may need to do this in batches depending on the size of your pan.

Step 3:
While the chicken is frying, prepare the honey soy glaze. In a small bowl, whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, sesame oil, and sriracha (if using). Adjust the taste by adding more honey for sweetness or more soy sauce for saltiness.

Step 4:
Once the chicken is cooked, remove it from the skillet and drain any excess oil. Reduce the heat to medium-low, then pour the honey soy glaze into the same skillet. Let it simmer for 2-3 minutes, stirring occasionally, until the sauce starts to thicken and become sticky.

Step 5:
Return the chicken bites to the skillet, tossing them in the glaze until they’re evenly coated and glossy. Allow the chicken to simmer in the sauce for another 2 minutes, ensuring it’s fully absorbed into the chicken.

Notes

COOKING Note:

Make sure to control the heat while cooking the glaze. If the heat is too high, the honey may burn and give a bitter taste to the sauce. Keep it at medium-low and stir frequently to ensure the sauce thickens properly without caramelizing too quickly.
