Ingredients
- Unsalted Butter: 1 cup, softened
- Granulated Sugar: 1 cup
- Large Egg: 1
- Vanilla Extract: 1 teaspoon
- All-Purpose Flour: 2 1/2 cups
- Baking Powder: 1/2 teaspoon
- Salt: 1/4 teaspoon

- Freshly Squeezed Lemon Juice: 1/4 cup
- Lemon Zest: 1 tablespoon

Instructions
- Preheat your oven to 350°F (175°C).
- Cream the softened butter and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract to the creamed mixture and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet ingredients.
- Grease a muffin tin or line it with paper liners.
- Press about 1 tablespoon of cookie dough into the bottom and up the sides of each muffin cup.
- In a medium bowl, whisk together the filling ingredients until smooth.
- Pour the lemon filling into each cookie cup, filling them about 3/4 full.
- Bake for 18-20 minutes until the filling is set and the edges are lightly golden.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar before serving.
