Description

Ingredients

  • Unsalted Butter: 1 cup, softened
  • Granulated Sugar: 1 cup
  • Large Egg: 1
  • Vanilla Extract: 1 teaspoon
  • All-Purpose Flour: 2 1/2 cups
  • Baking Powder: 1/2 teaspoon
  • Salt: 1/4 teaspoon
  • Granulated Sugar: 1 cup (for filling)
  • Large Eggs: 2 (for filling)
  • Freshly Squeezed Lemon Juice: 1/4 cup
  • Lemon Zest: 1 tablespoon
  • All-Purpose Flour: 1/4 cup (for filling)
  • Powdered Sugar: For dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the egg and vanilla extract to the creamed mixture and mix well.
  4. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet ingredients.
  5. Grease a muffin tin or line it with paper liners.
  6. Press about 1 tablespoon of cookie dough into the bottom and up the sides of each muffin cup.
  7. In a medium bowl, whisk together the filling ingredients until smooth.
  8. Pour the lemon filling into each cookie cup, filling them about 3/4 full.
  9. Bake for 18-20 minutes until the filling is set and the edges are lightly golden.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Dust with powdered sugar before serving.
