- For the Crostini:
- 1 baguette, sliced into ½-inch thick pieces
- 2 tablespoons olive oil

- For the Sweet Potatoes:
- 2 medium sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- Salt and pepper, to taste
- 1 teaspoon ground cinnamon
- For the Maple Walnut Topping:
- 1 cup walnuts, roughly chopped
- 2 tablespoons maple syrup
- 1 tablespoon unsalted butter
- A pinch of sea salt
- For the Assembly:
- 8 oz burrata cheese, drained and torn into pieces
- Fresh thyme leaves (for garnish)
- Honey drizzle (optional)
Instructions
Step 1: Prepare the Crostini
- Preheat the oven to 375°F (190°C).
- Arrange the baguette slices on a baking sheet and brush both sides with olive oil.
- Sprinkle with salt and pepper.
- Bake for 10-12 minutes, flipping halfway, until the bread is golden and crispy.
- Remove from the oven and let cool on a wire rack.
Step 2: Roast the Sweet Potatoes
- Increase the oven temperature to 400°F (200°C).
- In a mixing bowl, toss the diced sweet potatoes with olive oil, maple syrup, salt, pepper, and ground cinnamon.
- Spread the sweet potatoes in an even layer on a baking sheet lined with parchment paper.
- Roast for 20-25 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
- Set aside to cool slightly.
Step 3: Prepare the Maple Walnut Topping
- In a small skillet over medium heat, melt the butter.
- Add the chopped walnuts and toast them for 2-3 minutes, stirring constantly.
- Pour in the maple syrup and cook for an additional 2-3 minutes until the walnuts are caramelized.
- Sprinkle with a pinch of sea salt and transfer to a plate to cool.
Step 4: Assemble the Crostini
- Take the cooled crostini and spread a piece of burrata cheese on each slice.
- Top with a spoonful of roasted sweet potatoes.
- Add a sprinkle of the maple-glazed walnuts over the sweet potatoes.
Step 5: Garnish and Serve
- Garnish the crostini with fresh thyme leaves.
- Optionally, drizzle a bit of honey on top for added sweetness.
- Serve immediately and enjoy!
