Maple Walnut Burrata Crostini with Roasted Sweet Potatoes

  • For the Crostini:
    • 1 baguette, sliced into ½-inch thick pieces
    • 2 tablespoons olive oil
    • Salt, to taste
    • Black pepper, to taste
  • For the Sweet Potatoes:
    • 2 medium sweet potatoes, peeled and diced
    • 2 tablespoons olive oil
    • 1 tablespoon maple syrup
    • Salt and pepper, to taste
    • 1 teaspoon ground cinnamon
  • For the Maple Walnut Topping:
    • 1 cup walnuts, roughly chopped
    • 2 tablespoons maple syrup
    • 1 tablespoon unsalted butter
    • A pinch of sea salt
  • For the Assembly:
    • 8 oz burrata cheese, drained and torn into pieces
    • Fresh thyme leaves (for garnish)
    • Honey drizzle (optional)

Instructions

Step 1: Prepare the Crostini

  1. Preheat the oven to 375°F (190°C).
  2. Arrange the baguette slices on a baking sheet and brush both sides with olive oil.
  3. Sprinkle with salt and pepper.
  4. Bake for 10-12 minutes, flipping halfway, until the bread is golden and crispy.
  5. Remove from the oven and let cool on a wire rack.

Step 2: Roast the Sweet Potatoes

  1. Increase the oven temperature to 400°F (200°C).
  2. In a mixing bowl, toss the diced sweet potatoes with olive oil, maple syrup, salt, pepper, and ground cinnamon.
  3. Spread the sweet potatoes in an even layer on a baking sheet lined with parchment paper.
  4. Roast for 20-25 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
  5. Set aside to cool slightly.

Step 3: Prepare the Maple Walnut Topping

  1. In a small skillet over medium heat, melt the butter.
  2. Add the chopped walnuts and toast them for 2-3 minutes, stirring constantly.
  3. Pour in the maple syrup and cook for an additional 2-3 minutes until the walnuts are caramelized.
  4. Sprinkle with a pinch of sea salt and transfer to a plate to cool.

Step 4: Assemble the Crostini

  1. Take the cooled crostini and spread a piece of burrata cheese on each slice.
  2. Top with a spoonful of roasted sweet potatoes.
  3. Add a sprinkle of the maple-glazed walnuts over the sweet potatoes.

Step 5: Garnish and Serve

  1. Garnish the crostini with fresh thyme leaves.
  2. Optionally, drizzle a bit of honey on top for added sweetness.
  3. Serve immediately and enjoy!
