- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups heavy cream
- 1½ cups whole milk
- 4 oz (½ cup) cream cheese (softened)
- 1½ cups grated Parmesan cheese (preferably freshly grated)
- 1½ cups shredded mozzarella cheese
- 3 cloves garlic (minced)
- ¼ teaspoon ground nutmeg
- Salt and pepper (to taste)
- Chopped parsley (optional, for garnish)
Instructions
Step 1: Cook the Pasta
Start by bringing a large pot of salted water to a boil. Add the macaroni (or any other pasta you prefer) and cook according to the package instructions until al dente. Drain the pasta and set it aside.
Step 2: Make the Alfredo Sauce Base
In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.
Step 3: Create the Roux
Sprinkle in the flour and whisk it into the melted butter and garlic mixture. Cook the roux for 1-2 minutes, whisking constantly, until it turns a light golden color. This helps remove the raw taste of the flour while thickening the sauce.
Step 4: Add Cream and Milk
Gradually pour in the heavy cream and milk, whisking continuously to prevent lumps. Bring the mixture to a simmer, but avoid boiling it. As the sauce heats up, it will start to thicken, becoming smooth and creamy.
Step 5: Stir in Cheeses
Once the sauce has thickened, lower the heat and add the softened cream cheese. Stir until it completely melts into the sauce. Then, slowly stir in the grated Parmesan and shredded mozzarella cheese. Continue stirring until all the cheese is melted and the sauce is velvety smooth.
Step 6: Add Seasonings
Season the sauce with nutmeg, salt, and pepper to taste. Nutmeg enhances the creaminess of the Alfredo sauce, while salt and pepper bring out all the other flavors. Stir everything well to combine.
Step 7: Combine Pasta with Alfredo Sauce
Add the cooked and drained pasta to the skillet with the Alfredo sauce. Toss the pasta until it’s thoroughly coated with the creamy, cheesy sauce. At this point, you can also adjust the seasoning if needed by adding more salt or pepper.
Step 8: Serve Hot
Once your mac and cheese is fully combined and coated, remove it from heat. Transfer the Olive Garden Alfredo Mac and Cheese to serving bowls or a large platter. For extra garnish, sprinkle some freshly chopped parsley over the top for a pop of color and freshness.
