For the Egg Rolls:
- 1 pound thinly sliced beef (sirloin or flank steak)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 small green bell pepper, finely chopped

- 1 cup shredded provolone cheese
- 1 package egg roll wrappers
- Oil for frying
For the Creamy Garlic Dipping Sauce:
- ½ cup mayonnaise
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Filling
- Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the sliced beef, season with salt and pepper, and cook for 5-7 minutes until browned.
- Add Vegetables: Stir in the chopped onion and green bell pepper and cook for 3-4 minutes, until softened.
- Melt the Cheese: Remove the pan from heat and stir in shredded provolone cheese, mixing until melted and combined. Let the mixture cool slightly.
Step 2: Assemble the Egg Rolls
- Prepare Wrappers: Lay an egg roll wrapper on a clean surface with one corner facing you (diamond shape).
- Add Filling: Place about 2 tablespoons of the beef and cheese mixture in the center of the wrapper.
- Roll Tightly:
- Fold the bottom corner over the filling.
- Fold in the side corners and roll tightly.
- Use a little water on the edges to help seal the roll.
- Repeat: Continue assembling until all wrappers are filled.
Step 3: Fry the Egg Rolls
- Heat the Oil: In a deep skillet or pot, heat oil to 350°F (175°C).
- Fry in Batches: Add egg rolls in small batches, frying for 3-4 minutes per side, or until golden brown and crispy.
- Drain on Paper Towels: Remove and place on paper towels to absorb excess oil.
Step 4: Make the Creamy Garlic Dipping Sauce
- Combine Ingredients: In a small bowl, whisk together mayonnaise, lemon juice, minced garlic, salt, and pepper until smooth.
- Adjust Seasoning: Taste and add more salt, pepper, or lemon juice if needed.
Step 5: Serve & Enjoy!
- Serve Hot: Arrange the crispy egg rolls on a platter.
- Dip & Enjoy: Serve with the creamy garlic dipping sauce on the side.
