For the Patties:
- 2 large sweet potatoes, peeled and diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup breadcrumbs (gluten-free if desired)
- 1/4 cup oat flour (or all-purpose flour)
- 1 tablespoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
For the Tahini Sauce:
- 1/4 cup tahini (sesame seed paste)
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1 tablespoon maple syrup or honey (optional)
- 1/4 teaspoon salt
- 3 tablespoons water (or more for desired consistency)
Instructions
Step 1: Cook the Sweet Potatoes
- Place the diced sweet potatoes in a large pot, cover them with water, and bring to a boil.
- Reduce the heat and simmer for 10-12 minutes or until the sweet potatoes are tender.
- Drain and set aside to cool slightly.
Step 2: Prepare the Patty Mixture
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly broken down, leaving a few chunks for texture.
- Add the cooked sweet potatoes to the bowl and mash them together with the chickpeas.
- Stir in the diced onion, minced garlic, fresh parsley, and cilantro.
Step 3: Season the Patties
- Add the breadcrumbs, oat flour, cumin, ground coriander, smoked paprika, cayenne pepper, salt, and pepper.
- Mix well until all ingredients are evenly combined. The mixture should hold together when pressed. If too sticky, add a bit more breadcrumbs or flour.
Step 4: Shape the Patties
- Form the mixture into 8-10 patties, roughly 1/2 inch thick. You can use your hands or a measuring cup to keep the size uniform.
Step 5: Fry the Patties
- Heat olive oil in a large skillet over medium heat.
- Fry the patties in batches, about 3-4 minutes per side, or until golden brown and crispy.
- Remove and place on a paper towel-lined plate to drain any excess oil.
