  • Fresh basil leaves
  • Red pepper flakes
  • Drizzle of olive oil

Instructions

Step 1: Prepare the Tomato Topping

  1. Dice the Roma tomatoes and place them in a medium-sized mixing bowl.
  2. Add the chopped basil, minced garlic, olive oil, red wine vinegar, salt, and pepper.
  3. Gently toss the mixture to ensure all the ingredients are evenly coated.
  4. Let the mixture sit for about 10 minutes to allow the flavors to meld together.

Step 2: Whip the Cheese Base

  1. In a food processor, combine the crumbled feta cheese, softened cream cheese, sour cream, olive oil, lemon juice, minced garlic, and black pepper.
  2. Blend until the mixture becomes smooth and creamy, scraping down the sides of the processor as needed.
  3. Continue blending for an ultra-smooth texture if desired.

Step 3: Assemble the Dip

  1. Spread the whipped cheese mixture evenly into a serving bowl or dish, creating a smooth layer.
  2. Carefully spoon the marinated tomato mixture over the top, ensuring an even distribution.

Step 4: Garnish and Serve

  1. Drizzle a little olive oil over the assembled dip.
  2. Sprinkle fresh basil leaves and a pinch of red pepper flakes for added color and flavor.
  3. Serve immediately with crusty bread, crostini, or pita chips.

Notes
