Description

Air Fryer Sweet Potato Samosas are a delicious and healthier twist on the traditional Indian snack, filled with a savory mixture of mashed sweet potatoes and spices.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1/4 cup green peas (optional)
  • 1 tablespoon lemon juice
  • 1 package of spring roll wrappers or samosa wrappers
  • Oil spray for air frying
  • 1 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1 green chili (adjust to taste)
  • 1 tablespoon lemon juice
  • Salt to taste
  • Water as needed

Instructions

  1. Boil the diced sweet potatoes in a pot until tender, about 10-15 minutes. Drain and let cool slightly.
  2. Mash the sweet potatoes in a bowl and mix in olive oil, cumin seeds, coriander powder, garam masala, turmeric powder, salt, green peas, and lemon juice.
  3. Use store-bought wrappers or make your own dough with all-purpose flour, salt, and water. If using wrappers, keep them covered with a damp cloth.
  4. Cut a spring roll wrapper in half, place a spoonful of filling on one end, fold to form a triangle, and seal the edges with water.
  5. Preheat the air fryer to 375°F (190°C) and lightly spray the basket with oil. Arrange the samosas in a single layer and spray the tops with oil.
  6. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.

Notes

  • Ensure sweet potatoes are very tender for easy mashing.
  • Seal the edges of the samosas well to prevent leaking.
  • Preheat the air fryer for even cooking.
  • Avoid overcrowding the basket for best results.
  • Check samosas a few minutes before the suggested cooking time to prevent overcooking.
