- 1 large egg
- 1/4 cup sour cream

- 1 teaspoon lemon juice
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons granulated sugar (for crust)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well.
- Press about 1 tablespoon of the crumb mixture into each muffin cup to form the crust.
- In a small saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes until thickened. Let cool.
- Use a fork to mash the cooled berry mixture into a sauce, leaving some chunks for texture.
- In a large mixing bowl, beat softened cream cheese until smooth.
- Gradually add granulated sugar and vanilla extract, mixing until well combined.
- Add the egg and sour cream, mixing until just combined.
- Spoon the cheesecake filling into each muffin cup, filling about 3/4 full.
- Drop a teaspoon of the berry swirl on top of the cheesecake filling and swirl gently with a toothpick.
- Bake for 15-18 minutes until the edges are set and the centers are slightly jiggly.
- Allow to cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.
