Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well.
  3. Press about 1 tablespoon of the crumb mixture into each muffin cup to form the crust.
  4. In a small saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes until thickened. Let cool.
  5. Use a fork to mash the cooled berry mixture into a sauce, leaving some chunks for texture.
  6. In a large mixing bowl, beat softened cream cheese until smooth.
  7. Gradually add granulated sugar and vanilla extract, mixing until well combined.
  8. Add the egg and sour cream, mixing until just combined.
  9. Spoon the cheesecake filling into each muffin cup, filling about 3/4 full.
  10. Drop a teaspoon of the berry swirl on top of the cheesecake filling and swirl gently with a toothpick.

  12. Allow to cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.
