Preparation:

Step 1: Prepare the Potatoes

Preheat your oven to 400°F (200°C). Using a fork, prick the skin of each potato multiple times to allow steam to escape during baking. Place the potatoes directly on the oven rack and bake them for 45 to 60 minutes, or until they are tender when pierced with a fork.

Step 2: Season and Cook the Shrimp

While the potatoes are baking, prepare the shrimp. In a bowl, toss the peeled and deveined shrimp with Cajun seasoning and olive oil until they are evenly coated. Heat a skillet over medium heat and sauté the shrimp for about 3 to 4 minutes per side, until they turn pink and are fully cooked through. Remove from the pan and set aside.

Step 3: Prepare the Baked Potatoes

Once the potatoes are done baking, carefully remove them from the oven. Cut a slit down the top of each potato lengthwise and gently fluff the inside with a fork. Add a dollop of softened butter, a spoonful of sour cream, and season with salt and pepper to taste. Mix everything inside the potato to create a creamy and flavorful base.

Step 4: Assemble the Loaded Potatoes

Top each potato with a generous amount of shredded cheddar cheese. Then, divide the cooked Cajun shrimp evenly among the potatoes. Sprinkle the chopped green onions over the top for a burst of freshness and flavor.

Step 5: Melt the Cheese

Place the loaded potatoes back into the oven for about 3 to 5 minutes, or just long enough for the cheddar cheese to melt. Once the cheese is melted, remove the potatoes from the oven and serve them hot.
