For the Chicken:
- 2 boneless, skinless chicken breasts (thinly sliced)
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil

- 1 tablespoon hoisin sauce

The Lo Mein:
- 8 ounces lo mein noodles (or spaghetti as a substitute)
- 2 tablespoons vegetable oil
- 2 garlic cloves (minced)
- 1 teaspoon fresh ginger (grated)
- 1 cup carrots (julienned or thinly sliced)
- 1 cup bell peppers (thinly sliced)
- 1 cup snap peas
- 1/4 cup green onions (chopped)
- Sesame seeds (optional, for garnish)
Instructions
Preparation:
Step1: Marinate the Chicken
- In a bowl, combine soy sauce, cornstarch, and sesame oil.
- Add the sliced chicken and mix until coated. Let it marinate for 10-15 minutes while you prepare other ingredients.
Step2: Prepare the Sauce
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, chicken broth, and cornstarch (if using). Set aside.
Step3: Cook the Noodles
- Bring a pot of water to a boil and cook the lo mein noodles according to package instructions.
- Drain the noodles, rinse with cold water to stop the cooking process, and toss with a teaspoon of oil to prevent sticking.
Step4: Stir-Fry the Chicken
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the marinated chicken and stir-fry for 4-5 minutes until fully cooked. Remove from the wok and set aside.
Step5: Stir-Fry the Vegetables
- Add the remaining tablespoon of oil to the wok.
- Stir-fry garlic and ginger until fragrant, about 30 seconds.
- Add carrots, bell peppers, and snap peas. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
Step6: Combine Everything
- Return the cooked chicken to the wok with the vegetables.
- Pour in the prepared sauce and stir well to coat everything evenly.
- Add the cooked noodles to the wok, tossing until fully combined and heated through.
Step7: Garnish and Serve
- Sprinkle chopped green onions and sesame seeds on top before serving.

Cooking Notes:
- Sauce Thickness: If you prefer a thicker sauce, increase the cornstarch slightly.
- Veggie Options: Feel free to use broccoli, cabbage, mushrooms, or any vegetables you have on hand.
- Noodle Substitute: If lo mein noodles aren’t available, spaghetti or linguine are great substitutes.
