Ingredients
For the Base:
- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked white rice
- 1 can (15 oz) chili beans (undrained)
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup beef broth or water
- 1 packet chili seasoning mix (or homemade blend of chili powder, cumin, paprika, and cayenne pepper)
- 1 cup shredded cheddar cheese (more for topping)
Topping:
- 2 cups Frito chips
- 1 cup shredded cheddar cheese
Dressing:
- Sour cream
- Diced onions
Instructions
Step 1:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Step 2:
In a large skillet over medium heat, brown the ground beef. Break it up with a spoon as it cooks. Once the meat is no longer pink, add the diced onions and garlic. Sauté the onions and garlic until they are soft and fragrant, about 5 minutes.
Step 3:
Drain any excess grease from the skillet, then stir in the chili seasoning mix. Cook for another minute to let the spices bloom and become aromatic.
Step 4:
Add the uncooked rice, undrained chili beans, diced tomatoes with green chilies, and beef broth (or water) to the skillet. Stir to combine everything well. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
Step 5:
Once the rice is fully cooked, transfer the chili beef and rice mixture into the prepared baking dish. Spread it out evenly across the dish.
Step 6:
Sprinkle the shredded cheddar cheese evenly over the top of the chili rice mixture. Next, add a generous layer of Frito chips on top of the cheese. Finish by adding another layer of shredded cheddar cheese over the chips.
Step 7:
Bake the casserole in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the Frito chips are golden and crispy.
Step 8:
Remove the dish from the oven and let it rest for a few minutes before serving. Top each portion with a dollop of sour cream and a sprinkle of diced onions for extra flavor and texture.
