- 16 oz cream cheese, softened

- 2 large eggs
- 1/4 cup sour cream
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- Cut each cinnamon roll into quarters and toss in melted butter and cinnamon sugar mixture.
- Press the coated cinnamon roll pieces evenly into the bottom of the prepared springform pan.
- In a mixing bowl, beat cream cheese until smooth, then add sugar, vanilla, eggs, and sour cream, mixing until combined.
- Pour the cheesecake filling over the cinnamon roll crust and spread evenly.
- Bake for 45-50 minutes or until the center is set, then cool at room temperature for 30 minutes and refrigerate for at least 4 hours.
- Prepare the cream cheese icing by beating together softened cream cheese and butter, then adding powdered sugar and vanilla, adjusting consistency with milk.
- Once chilled, remove the cheesecake from the pan, drizzle or spread the icing on top, slice, and serve.
