Instructions

Prepare the Filling:

Step 1: In the top of a double boiler, combine light brown sugar, cornstarch, and salt. Gradually stir in milk and cook over medium heat, stirring constantly, until the mixture thickens (about 20 minutes).

Incorporate Egg Yolks:

Step 2: Gradually whisk the beaten egg yolks into the thickened mixture. Continue to cook and stir until it reaches a smooth, custard-like consistency.

Preheat Oven:

Step 3: Set your oven to 400°F (200°C).

Finish the Filling:

Step 4: Remove from heat and stir in butter and vanilla extract until smooth.

Assemble and Bake:

Step 5: Pour the butterscotch filling into the baked pie crust. Bake in the preheated oven for about 5 minutes, or until the top of the filling starts to brown slightly.
