Wonton Cups:
- 12 wonton wrappers
- Cooking spray or olive oil spray (for baking)
Chicken & Avocado Filling:
- 1½ cups cooked chicken breast, diced or shredded (rotisserie chicken works beautifully!)
- 1 ripe avocado, diced
- ¼ cup sweet chili sauce (or use spicy mayo for a tangy kick)
- 1 tablespoon chopped fresh cilantro

- Toasted sesame seeds
- Lime wedges

Instructions
Step 1: Prepare Your Oven and Pan Preheat your oven to 375°F (190°C). Take a 12-cup mini muffin tin and gently press a wonton wrapper into each cup. Try to shape them into a bowl form with folds along the sides. Lightly spray each wonton with cooking spray or brush with a little olive oil for a golden, crispy finish.
Step 2: Bake the Wonton Shells Pop the tin into the oven and bake for 8–10 minutes or until the wrappers are lightly golden and crisp. Keep an eye on them toward the end—they can go from golden to burnt quickly! Remove from oven and let them cool slightly in the tin before gently transferring them to a plate or cooling rack.
Step 3: Toss the Chicken in Sauce While the wontons bake, toss the cooked, shredded or diced chicken with the sweet chili sauce in a medium mixing bowl. Stir well to coat each piece evenly. Want a little more heat? Swap or add a spoonful of spicy mayo, Sriracha, or a splash of soy sauce for a richer umami flavor.
Step 4: Prep the Avocado Dice your ripe avocado into small cubes. Be gentle—overmixing will make it mushy. You want those creamy chunks to keep their shape for that perfect texture contrast. If prepping ahead of time, toss them in a bit of lime juice to prevent browning.
Step 5: Assemble the Cups Once your wonton shells are cool and crisp, begin assembling. Spoon about a tablespoon of the saucy chicken mixture into each cup. Top with a few avocado cubes, a sprinkle of chopped cilantro, and any of the optional toppings like toasted sesame seeds or green onions.
Step 6: Serve & Savor Arrange on a platter, squeeze a touch of fresh lime juice over each one, and serve immediately. These are best enjoyed fresh when the wontons are at peak crispiness!
Notes
- Make sure your wonton wrappers are fresh—they crisp better and mold well in muffin tins.
- Use ripe but firm avocados to prevent them from becoming mushy in the cup.
