Crispy Zucchini and Spinach Feta Fritters with Tzatziki Dip

Fritters:

  • 1 large zucchini, grated
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup green onions, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Olive oil, for frying

Tzatziki Dip:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Zucchini

  1. Grate the zucchini, then place it in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible to ensure the fritters will be crispy and not soggy.
  2. Set the zucchini aside.

Step 2: Combine the Fritter Ingredients

  1. In a large mixing bowl, combine the grated zucchini, chopped spinach, crumbled feta cheese, green onions, and parsley.
  2. Add in the flour, beaten eggs, garlic powder, dried oregano, salt, and pepper. Mix everything well until fully combined. The batter should hold together when pressed but remain moist.

Step 3: Shape and Cook the Fritters

  1. Heat a large skillet over medium heat and add a thin layer of olive oil, just enough to coat the pan.
  2. Take a small portion of the batter (about 2 tablespoons) and form it into a flat patty. Carefully place it in the heated skillet.
  3. Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.
  4. Repeat the process with the remaining batter, adding more oil to the skillet as needed.

Step 4: Prepare the Tzatziki Dip

  1. In a small bowl, combine the Greek yogurt, grated cucumber (make sure it’s well-drained), minced garlic, chopped dill, lemon juice, salt, and pepper.
  2. Stir well to combine. Taste and adjust seasonings as desired.
  3. Refrigerate until ready to serve to allow the flavors to meld.

Step 5: Serve

  1. Place the fritters on a serving plate and garnish with extra parsley or crumbled feta, if desired.
  2. Serve warm with a generous side of tzatziki for dipping.
