Fritters:
- 1 large zucchini, grated
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup green onions, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- Olive oil, for frying
Tzatziki Dip:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Zucchini
- Grate the zucchini, then place it in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible to ensure the fritters will be crispy and not soggy.
- Set the zucchini aside.
Step 2: Combine the Fritter Ingredients
- In a large mixing bowl, combine the grated zucchini, chopped spinach, crumbled feta cheese, green onions, and parsley.
- Add in the flour, beaten eggs, garlic powder, dried oregano, salt, and pepper. Mix everything well until fully combined. The batter should hold together when pressed but remain moist.
Step 3: Shape and Cook the Fritters
- Heat a large skillet over medium heat and add a thin layer of olive oil, just enough to coat the pan.
- Take a small portion of the batter (about 2 tablespoons) and form it into a flat patty. Carefully place it in the heated skillet.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.
- Repeat the process with the remaining batter, adding more oil to the skillet as needed.
Step 4: Prepare the Tzatziki Dip
- In a small bowl, combine the Greek yogurt, grated cucumber (make sure it’s well-drained), minced garlic, chopped dill, lemon juice, salt, and pepper.
- Stir well to combine. Taste and adjust seasonings as desired.
- Refrigerate until ready to serve to allow the flavors to meld.
Step 5: Serve
- Place the fritters on a serving plate and garnish with extra parsley or crumbled feta, if desired.
- Serve warm with a generous side of tzatziki for dipping.
