Instructions
Step 1: Prepare the Sweet Potatoes
- Preheat your oven to 400°F (200°C).
- Arrange the sweet potato rounds on a baking sheet lined with parchment paper.
- Drizzle the rounds with olive oil, then sprinkle salt and pepper over them.
- Toss the rounds gently to ensure even coating.
- Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and edges are slightly caramelized.
Step 2: Assemble the Towers
- Once the sweet potatoes have cooled slightly, place one round on a serving plate.
- Top each sweet potato round with a small spoonful of burrata cheese, allowing it to naturally spread over the round.
- Add a small dollop of fig jam over the burrata for a layer of sweetness.
- Place another sweet potato round on top, creating a layered “tower” effect. Repeat the burrata and fig jam steps if stacking more rounds.
Step 3: Add the Finishing Touches
- Sprinkle each tower with a handful of pomegranate arils, adding color and a burst of juicy flavor.
- Top with crushed pistachios for an extra crunch and beautiful green contrast.
- Garnish with fresh thyme leaves for an aromatic touch (optional).
