Instructions

Step 1: Prepare the Sweet Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the sweet potato rounds on a baking sheet lined with parchment paper.
  3. Drizzle the rounds with olive oil, then sprinkle salt and pepper over them.
  4. Toss the rounds gently to ensure even coating.
  5. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and edges are slightly caramelized.

Step 2: Assemble the Towers

  1. Once the sweet potatoes have cooled slightly, place one round on a serving plate.
  2. Top each sweet potato round with a small spoonful of burrata cheese, allowing it to naturally spread over the round.
  3. Add a small dollop of fig jam over the burrata for a layer of sweetness.
  4. Place another sweet potato round on top, creating a layered “tower” effect. Repeat the burrata and fig jam steps if stacking more rounds.

Step 3: Add the Finishing Touches

  1. Sprinkle each tower with a handful of pomegranate arils, adding color and a burst of juicy flavor.
  2. Top with crushed pistachios for an extra crunch and beautiful green contrast.
  3. Garnish with fresh thyme leaves for an aromatic touch (optional).
