Preparation:

Step 1: Prepare the Jalapeños
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.
  2. Slice the jalapeños in half lengthwise and remove the seeds and membranes using a spoon or paring knife. For a milder heat, thoroughly remove all seeds; leave a few for a spicier kick.
Step 2: Make the Shrimp Filling
  1. In a mixing bowl, combine the softened cream cheese, cheddar cheese, Monterey Jack cheese, and mayonnaise.
  2. Add the chopped shrimp, Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, and green onions.
  3. Mix everything until well combined. Season with salt and black pepper to taste.
Step 3: Stuff the Jalapeños
  1. Using a small spoon or piping bag, fill each jalapeño half generously with the shrimp mixture.
Step 4: Prepare the Topping
  1. In a small bowl, mix panko breadcrumbs, Parmesan cheese, and melted butter.
  2. Sprinkle the breadcrumb mixture evenly over the stuffed jalapeños.
Step 5: Bake and Serve
  1. Place the stuffed jalapeños on the prepared baking sheet, cut side up.
  2. Bake for 18-22 minutes, or until the topping is golden brown and crispy.
  3. Garnish with fresh parsley and serve warm.

  • Adjusting Spice Levels: Jalapeños can vary in heat. If you prefer a very mild flavor, you can soak the jalapeño halves in ice water for 10 minutes after deseeding them.
