Step 1: Prepare the Jalapeños
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.
- Slice the jalapeños in half lengthwise and remove the seeds and membranes using a spoon or paring knife. For a milder heat, thoroughly remove all seeds; leave a few for a spicier kick.
Step 2: Make the Shrimp Filling
- In a mixing bowl, combine the softened cream cheese, cheddar cheese, Monterey Jack cheese, and mayonnaise.
- Add the chopped shrimp, Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, and green onions.
- Mix everything until well combined. Season with salt and black pepper to taste.
Step 3: Stuff the Jalapeños
- Using a small spoon or piping bag, fill each jalapeño half generously with the shrimp mixture.
Step 4: Prepare the Topping
- In a small bowl, mix panko breadcrumbs, Parmesan cheese, and melted butter.
- Sprinkle the breadcrumb mixture evenly over the stuffed jalapeños.
Step 5: Bake and Serve
- Place the stuffed jalapeños on the prepared baking sheet, cut side up.
- Bake for 18-22 minutes, or until the topping is golden brown and crispy.
- Garnish with fresh parsley and serve warm.

- Adjusting Spice Levels: Jalapeños can vary in heat. If you prefer a very mild flavor, you can soak the jalapeño halves in ice water for 10 minutes after deseeding them.
