- 1 lb (450g) steak, cut into bite-sized pieces (ribeye, sirloin, or tenderloin work best)
- 2 cups broccoli florets
- 1 large red bell pepper, chopped into chunks
- 1 large yellow bell pepper, chopped into chunks
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 2 tablespoons olive oil (divided)
- 1 teaspoon salt (divided)
- ½ teaspoon black pepper (divided)
- ½ teaspoon smoked paprika (optional)
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
Step 1: Roast the Vegetables
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. In a large bowl, toss the broccoli florets and bell peppers with 1 tablespoon of olive oil, ½ teaspoon of salt, ¼ teaspoon of black pepper, and smoked paprika (if using). Spread the vegetables evenly on the prepared baking sheet.
Roast the vegetables in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized. Stir halfway through to ensure even roasting.
Step 2: Prepare the Steak Bites
While the vegetables are roasting, heat a large skillet or cast-iron pan over medium-high heat. Pat the steak pieces dry with paper towels to remove any excess moisture. This step is crucial for achieving a good sear. Season the steak bites with the remaining ½ teaspoon of salt and ¼ teaspoon of black pepper.
Step 3: Sear the Steak
Once the skillet is hot, add 1 tablespoon of olive oil. When the oil is shimmering, add the steak bites in a single layer. Sear them on each side for about 2-3 minutes, until a golden-brown crust forms. Avoid overcrowding the pan, as it may prevent the steak from browning properly. If needed, sear the steak bites in batches.
Once the steak bites are browned and cooked to your desired level (medium-rare or medium is recommended), transfer them to a plate and set aside.
Step 4: Make the Garlic Butter Sauce
In the same skillet, reduce the heat to medium and add the butter. Once the butter melts, stir in the minced garlic and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic. Scrape up any browned bits left from the steak for extra flavor.
Add the steak bites back into the skillet and toss them in the garlic butter sauce, cooking for another 1-2 minutes to coat the steak pieces evenly.
Step 5: Combine Steak Bites and Roasted Vegetables
Once the roasted vegetables are done, remove them from the oven and transfer them to a large serving platter or plate. Pour the garlic butter steak bites over the roasted vegetables and toss gently to combine.
Step 6: Garnish and Serve
For an added burst of freshness, sprinkle the dish with chopped parsley. Serve immediately and enjoy!
