Description

Grandma’s Blueberry Pie Bombs are delightful pockets of joy filled with sweet blueberries and wrapped in a flaky crust, perfect for any occasion.


Ingredients

  • 1 cup fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)
  • Sugar for sprinkling

Instructions

  1. Prepare the filling by combining blueberries, sugar, cornstarch, lemon juice, and vanilla in a saucepan and cook over medium heat until thickened.
  2. Preheat the oven to 400°F (200°C) and roll out the pie crusts on a floured surface, cutting out 4-inch circles.
  3. Assemble the bombs by placing 1 tablespoon of filling in the center of each circle, folding and sealing the edges.
  4. Place the assembled bombs on a baking sheet, brush with beaten egg, and sprinkle with sugar. Bake for 15-20 minutes until golden brown.
  5. Cool slightly on a wire rack before serving.
