- 1 cup fresh or frozen blueberries
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
- Sugar for sprinkling
Instructions
- Prepare the filling by combining blueberries, sugar, cornstarch, lemon juice, and vanilla in a saucepan and cook over medium heat until thickened.
- Preheat the oven to 400°F (200°C) and roll out the pie crusts on a floured surface, cutting out 4-inch circles.
- Assemble the bombs by placing 1 tablespoon of filling in the center of each circle, folding and sealing the edges.
- Place the assembled bombs on a baking sheet, brush with beaten egg, and sprinkle with sugar. Bake for 15-20 minutes until golden brown.
- Cool slightly on a wire rack before serving.
