For the Creamy Alfredo Fettuccine:
- 12 oz (340g) fettuccine pasta
- 2 tablespoons unsalted butter
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder (or 2 fresh garlic cloves, minced)
- Salt and freshly ground black pepper, to taste
- Fresh parsley or basil, finely chopped (for garnish)
Instructions
Step 1: Cook the Fettuccine
- Boil the Pasta – Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente (about 10-12 minutes). Drain the pasta and set aside, reserving ½ cup of the pasta water.
Step 2: Prepare the Honey Garlic Chicken Bites
- Season the Chicken – In a large bowl, season the bite-sized chicken pieces with salt and pepper. Toss to coat evenly.
- Sear the Chicken – Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the chicken pieces in a single layer, cooking for about 4-5 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.
- Make the Honey Garlic Sauce – In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for 30 seconds until fragrant. Stir in the honey, soy sauce, rice vinegar, and water. Simmer for 3-4 minutes until the sauce thickens slightly.
- Toss the Chicken in the Sauce – Return the cooked chicken to the skillet, tossing it in the honey garlic sauce to coat each piece. Allow the chicken to cook for an additional 2-3 minutes to absorb the flavors. If desired, add a pinch of crushed red pepper flakes for a touch of heat.
- Garnish – Once done, remove from heat and sprinkle with fresh parsley.
Step 3: Prepare the Alfredo Sauce
- Make the Alfredo Sauce – In a separate saucepan, melt the butter over medium heat. Add the garlic powder (or minced garlic) and cook for 1 minute until fragrant. Stir in the heavy cream and bring the mixture to a simmer.
- Add the Parmesan Cheese – Reduce the heat to low and gradually whisk in the grated Parmesan cheese, stirring until the cheese is melted and the sauce is smooth and creamy. If the sauce is too thick, add some of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
- Season – Taste the Alfredo sauce and season with salt and freshly ground black pepper.
- Toss the Pasta – Add the cooked fettuccine to the Alfredo sauce, tossing to coat the pasta evenly in the creamy sauce.
Step 4: Plate the Dish
- Serve the Fettuccine – Spoon a generous portion of the creamy Alfredo fettuccine onto each plate as the base of the dish.
- Top with Honey Garlic Chicken Bites – Place the honey garlic chicken bites on top of the fettuccine, ensuring the chicken is coated in the sweet garlic glaze.
Step 5: Garnish and Serve
- Garnish – Sprinkle chopped fresh parsley or basil over the entire dish for a pop of color and added freshness.
