Muffins:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 cup shredded sharp cheddar cheese
- 2–3 jalapeño peppers, seeded and finely diced
- 1/4 cup honey (plus extra for drizzling, if desired)
Honey Butter Glaze:
- 1/4 cup unsalted butter, melted
- 2 tbsp honey
Instructions
Step 1: Prepare the Oven and Muffin Pan
- Preheat your oven to 400°F (200°C). Grease a 12-cup muffin pan or line with paper liners for easy removal.
Step 2: Mix Dry Ingredients
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk until evenly mixed.
Step 3: Combine Wet Ingredients
- In another bowl, whisk together the melted butter, buttermilk, eggs, and honey until smooth and well incorporated.
Step 4: Add Wet Ingredients to Dry Ingredients
- Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined – avoid over-mixing to ensure a tender muffin texture.
Step 5: Fold in Jalapeños and Cheddar
- Gently fold in the shredded cheddar cheese and diced jalapeños. The batter should be lumpy but with no large pockets of dry flour.
Step 6: Fill the Muffin Cups
- Spoon the batter evenly into the prepared muffin cups, filling each cup about three-quarters full to allow room for rising.
Step 7: Bake the Muffins
- Place the muffin pan in the preheated oven and bake for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden on top.
Step 8: Prepare the Honey Butter Glaze
- While the muffins are baking, prepare the honey butter glaze. In a small bowl, whisk together the melted butter and honey until well combined.
Step 9: Glaze the Muffins
- Once the muffins are out of the oven, let them cool slightly for about 5 minutes, then brush the tops generously with the honey butter glaze.
Step 10: Serve Warm and Enjoy!
- Serve the muffins warm to enjoy the full flavor, or let them cool to room temperature.
