Muffins:

  • 23 jalapeño peppers, seeded and finely diced
  • 1/4 cup honey (plus extra for drizzling, if desired)

Honey Butter Glaze:

  • 1/4 cup unsalted butter, melted
  • 2 tbsp honey

Instructions

Step 1: Prepare the Oven and Muffin Pan

  1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin pan or line with paper liners for easy removal.

Step 2: Mix Dry Ingredients

  1. In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk until evenly mixed.

Step 3: Combine Wet Ingredients

  1. In another bowl, whisk together the melted butter, buttermilk, eggs, and honey until smooth and well incorporated.

Step 4: Add Wet Ingredients to Dry Ingredients

  1. Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined – avoid over-mixing to ensure a tender muffin texture.

Step 5: Fold in Jalapeños and Cheddar

  1. Gently fold in the shredded cheddar cheese and diced jalapeños. The batter should be lumpy but with no large pockets of dry flour.

Step 6: Fill the Muffin Cups

  1. Spoon the batter evenly into the prepared muffin cups, filling each cup about three-quarters full to allow room for rising.

Step 7: Bake the Muffins

  1. Place the muffin pan in the preheated oven and bake for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden on top.
