For the Caramel Pecan Layer:

  • 1 cup light corn syrup

  • 3 cups pecan halves

For the Chocolate Layer:

  • 1 cup semi-sweet chocolate chips

Instructions

Step 1: Prepare the Caramel Mixture

  1. In a medium saucepan over medium heat, melt the butter.
  2. Stir in the brown sugar, light corn syrup, vanilla extract, and salt.
  3. Continue stirring constantly as the mixture comes to a boil. Boil gently for about 5 minutes until it thickens slightly.

Step 2: Add the Pecans

  1. Remove the saucepan from heat and immediately stir in the pecan halves.
  2. Mix until the pecans are fully coated with the caramel mixture.

Step 3: Spread and Cool the Pecan Mixture

  1. Line a baking sheet with parchment paper or a silicone baking mat for easy removal.
  2. Pour the pecan mixture onto the prepared baking sheet and spread it out evenly using a spatula.
  3. Allow the mixture to cool for about 30 minutes until it firms up.

Step 4: Add the Chocolate Layer

  1. Place the chocolate chips in a microwave-safe bowl. Melt in 30-second intervals, stirring between each interval until smooth.
  2. Pour the melted chocolate over the cooled pecan mixture. Use a spatula to spread it evenly across the surface.

Step 5: Finish and Serve

  1. While the chocolate is still warm, sprinkle a pinch of sea salt over the top for a perfect sweet-salty balance.
  2. Let the bark cool completely at room temperature or place it in the refrigerator to speed up the process.
  3. Once the chocolate hardens, break the bark into bite-sized pieces.
