  • 4 low-carb tortillas
  • 1 cup shredded mozzarella cheese
  • ½ cup sliced pepperoni
  • ½ teaspoon Italian seasoning

Preparation

Step 1: To begin, preheat the oven to 400°F (200°C). While the oven heats, prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil.

Step 2: Next, lay each tortilla flat on a clean surface. Then, evenly spread ¼ cup of shredded mozzarella cheese over each tortilla. After that, add a few slices of pepperoni, and finally, sprinkle a pinch of Italian seasoning to enhance the flavor.

Step 3: Once the tortillas are prepared, carefully roll each one tightly from one edge to the other. To prevent the filling from spilling out, ensure the roll is secure. When done, place each roll seam-side down on the prepared baking sheet.

Step 4: At this point, you can add optional toppings for extra flavor. Simply sprinkle a little shredded mozzarella cheese on top of each roll-up, and then place three slices of pepperoni over the cheese for a crispy and bubbly finish.

Step 5: Now, lightly brush the tops of the roll-ups with olive oil. This step helps achieve a beautiful golden-brown color and ensures the roll-ups will be crispy.

Step 6: Next, place the baking sheet in the oven and bake for 12-15 minutes. During this time, the tortillas will become golden and crispy, the cheese inside will melt perfectly, and the toppings will bubble up beautifully.

Step 7: Finally, remove the roll-ups from the oven and allow them to cool slightly before serving. For the best experience, serve them warm alongside a bowl of pizza sauce for dipping.
