For the Avocado Garlic Yogurt:

  • 1 ripe avocado
  • ½ cup plain Greek yogurt
  • 1 garlic clove, minced
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Patties

  1. Mix Ingredients: In a large bowl, combine cooked quinoa, mashed sweet potato, almond flour, green onions, cilantro, garlic powder, cumin, salt, and pepper. Mix until the ingredients are well combined and hold together.
  2. Form Patties: Shape the mixture into small patties, about 2-3 inches in diameter. Set aside.

Step 2: Cook the Patties

  1. Heat Oil: In a large skillet, heat olive oil over medium heat.
  2. Fry Patties: Gently place the patties in the skillet and cook for 4-5 minutes on each side, or until golden brown and crispy.
  3. Drain Excess Oil: Remove the patties and place them on a paper towel-lined plate to drain excess oil.

Step 3: Make the Avocado Garlic Yogurt

  1. Blend Ingredients: In a blender or food processor, combine the avocado, Greek yogurt, minced garlic, lime juice, salt, and pepper.
  2. Blend Until Smooth: Process until the mixture is smooth and creamy.

Step 4: Serve

  1. Plate Patties: Arrange the sweet potato quinoa patties on a serving plate.
  2. Top with Yogurt: Add a generous dollop of Avocado Garlic Yogurt on each patty.
  3. Garnish: Sprinkle with additional cilantro or a squeeze of lime juice for extra flavor.
