Instructions

Step 1: Prepare the Meatloaf

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. Sauté Vegetables: Heat a skillet over medium heat with a drizzle of olive oil. Add the finely chopped onion and sliced mushrooms. Sauté for 5 minutes or until softened and slightly caramelized. Remove from heat and allow to cool slightly.
  3. Mix Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, sautéed onion and mushrooms, shredded Swiss cheese, minced garlic, egg, Worcestershire sauce, dried thyme, salt, and pepper. Gently mix until the ingredients are evenly incorporated, being careful not to overwork the meat.

Step 2: Shape and Bake

  1. Shape the Meatloaf: Transfer the meat mixture to the prepared loaf pan. Shape it into a loaf, pressing gently to ensure even cooking.
  2. Bake: Place the loaf pan in the preheated oven. Bake for 1 hour, or until the internal temperature of the meatloaf reaches 160°F (70°C) when checked with a meat thermometer.

Step 3: Make the Dressing

  1. Prepare Dressing: In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper. Adjust the seasoning to taste.

Step 4: Serve

  1. Let It Rest: After removing the meatloaf from the oven, let it rest for 10 minutes. This step helps the juices redistribute for a moist and tender texture.
  2. Slice and Garnish: Slice the meatloaf into even portions. Drizzle with the prepared garlic herb dressing and garnish with freshly chopped parsley for a vibrant finish.
