Instructions
Preparation:
Step 1: Prepare the Crust
- In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter.
- Mix until the crumbs are evenly coated with butter.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Refrigerate for 30 minutes to set.
Step 2: Make the Filling
- In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth and creamy.
- Add in the sour cream, vanilla extract, orange juice, and orange zest, mixing until fully combined.
- Gently fold in the whipped cream, making sure the mixture stays light and fluffy.
Step 3: Assemble the Cheesecake
- Pour half of the cream cheese mixture over the prepared crust, spreading it evenly.
- Evenly distribute half of the pineapple chunks and mandarin orange slices over the mixture.
- Pour the remaining cream cheese mixture on top, smoothing it out to cover the fruit.
- Create a swirl pattern with additional orange juice or orange jelly, if desired, for an extra pop of color and flavor.
Step 4: Chill the Cheesecake
- Refrigerate the cheesecake for at least 4 hours or until set.
- For best results, refrigerate overnight.
Step 5: Garnish and Serve
- Just before serving, top the cheesecake with whipped cream, pineapple chunks, mandarin orange slices, fresh mint leaves, and berries.
