- 1 lb large shrimp, peeled and deveined
- 1/2 lb smoked sausage (such as kielbasa or andouille), sliced into rounds
- 12 oz Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp paprika (optional, for extra flavor)
For the Honey Garlic Sauce:
- 1/4 cup honey
- 3 garlic cloves, minced
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp olive oil
- 1 tsp chili flakes (optional, for heat)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or lightly grease it with olive oil.
Step 2: Prepare the Brussels Sprouts and Sausage
- In a large bowl, toss the halved Brussels sprouts with 1 tbsp olive oil, salt, black pepper, and 1 tsp paprika (optional).
- Spread the Brussels sprouts in an even layer on the prepared sheet pan, cut side down for optimal caramelization.
- Add the sliced sausage rounds to the pan, arranging them between the Brussels sprouts.
- Place the pan in the oven and roast for 15-18 minutes, or until the Brussels sprouts are slightly golden and the sausage begins to brown.
Step 3: Make the Honey Garlic Sauce
- While the Brussels sprouts and sausage are roasting, prepare the sauce.
- In a small bowl, whisk together 1/4 cup honey, 3 minced garlic cloves, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp olive oil, and 1 tsp chili flakes (optional for spice).
- Set the sauce aside.
Step 4: Add the Shrimp
- After the Brussels sprouts have roasted for about 15-18 minutes, remove the pan from the oven.
- Add the shrimp to the pan, distributing them evenly around the Brussels sprouts and sausage.
- Drizzle the prepared honey garlic sauce over the shrimp, sausage, and Brussels sprouts, making sure everything is evenly coated.
Step 5: Return to the Oven
- Return the sheet pan to the oven and roast for an additional 8-10 minutes, or until the shrimp are cooked through and pink. Be careful not to overcook the shrimp, as they can become rubbery.
Step 6: Serve
- Once everything is cooked, remove the pan from the oven and give everything a gentle toss to distribute the sauce.
- Serve the Honey Garlic Shrimp, Sausage & Brussels Sprouts immediately, either on its own or over a bed of rice or quinoa for a more substantial meal.
