Sheet Pan Sausage, Shrimp, and Veggies: A One-Pan, Flavor-Packed Dinner

  • 1 lb shrimp, peeled and deveined
  • 1 lb sausage, sliced (use smoked sausage, chicken sausage, or andouille)
  • 2 cups broccoli florets
  • 2 bell peppers, sliced (any color)
  • 1 zucchini, sliced into rounds
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • Lemon wedges (for serving)

Instructions

Step 1: Preheat the Oven

  • Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.

Step 2: Prepare the Veggies and Sausage

  • Slice the sausage into rounds. Cut the bell peppers and zucchini into thin slices and break the broccoli into florets. Place all the prepared veggies and sausage on the sheet pan.

Step 3: Season the Ingredients

  • Drizzle the sausage and veggies with 2 tablespoons of olive oil. Add half of the minced garlic, along with smoked paprika, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Toss everything until evenly coated. Spread the mixture in a single layer across the pan.

Step 4: Roast the Sausage and Vegetables

  • Roast in the preheated oven for 15-18 minutes, stirring halfway through, until the vegetables begin to soften and the sausage is golden.

Step 5: Add the Shrimp

  • While the veggies and sausage are roasting, toss the shrimp in a bowl with the remaining 1 tablespoon of olive oil, garlic, salt, and pepper.

Step 6: Finish Roasting

  • Remove the sheet pan from the oven and add the shrimp on top of the sausage and vegetables. Return the pan to the oven and roast for an additional 6-8 minutes, until the shrimp turn pink and opaque.

Step 7: Serve and Enjoy

  • Remove the sheet pan from the oven and give everything a final toss. Squeeze fresh lemon juice over the top and serve immediately.
