Preparation:
Step 1:
Begin by cooking your spicy noodles according to the package instructions. Once done, drain the noodles, set them aside, and toss lightly with a drizzle of sesame oil to prevent sticking.
Step 2:
While the noodles are cooking, prepare the kielbasa. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Once the oil is hot, add the sliced kielbasa and sear it until it becomes crispy and browned. This should take approximately 3-4 minutes. Once seared, remove the kielbasa from the pan and set it aside.
Step 3:
In the same skillet, add the peeled and deveined shrimp. Sear the shrimp for about 2-3 minutes per side or until they turn pink and opaque. Be careful not to overcook the shrimp, as they can turn rubbery if left on the heat too long. Once cooked, remove the shrimp from the skillet and set them aside with the kielbasa.
Step 4:
With the skillet still on medium heat, add the minced garlic, soy sauce, chili paste, and sesame oil. Stir the ingredients together, allowing the garlic to become fragrant. This should take about 30 seconds to 1 minute. Be cautious not to burn the garlic, as it can become bitter.
Step 5:
Once the sauce is fragrant, add the cooked noodles back into the skillet. Toss the noodles well so they get fully coated in the spicy garlic sauce. Allow the noodles to absorb the flavors for about 2-3 minutes, stirring occasionally to prevent sticking.
Step 6:
Serve the noodles by dividing them evenly into bowls. Top each bowl with the seared kielbasa slices and shrimp. For added richness and texture, place halved soft-boiled eggs on top of the noodles.
Step 7:
Garnish each serving with freshly sliced green onions and chopped cilantro. Sprinkle a pinch of salt and pepper if desired, or adjust the seasonings according to your taste.

Cooking Note:
- Adjust the chili paste based on your spice tolerance. If you prefer milder heat, reduce the amount of chili paste or opt for a more mild chili sauce. Conversely, if you love a spicy kick, add more!
- For perfectly soft-boiled eggs, boil the eggs for 6-7 minutes, then immediately transfer them to an ice bath to stop the cooking process. This ensures a creamy, slightly runny yolk.
