For the beef marinade:

  • 500g (1 lb) beef sirloin or flank steak, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil

For the noodles:

  • 300g (10 oz) fresh or dried egg noodles or rice noodles
  • 1 tbsp vegetable oil (for frying)

The sticky sauce:

  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch dissolved in 2 tbsp water (slurry)

Vegetables and garnishes:

  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)
  • Fresh cilantro or parsley (optional)

Instructions

Preparation:

Step1: Marinate the beef

  1. In a medium bowl, combine soy sauce, oyster sauce, cornstarch, and sesame oil.
  2. Add the thinly sliced beef and coat evenly with the marinade.
  3. Cover and let it marinate for at least 20 minutes (or up to 2 hours in the fridge for deeper flavor).

Step2: Prepare the noodles

  1. Cook the noodles according to the package instructions. Drain and set aside.
  2. Toss the cooked noodles with a little sesame oil to prevent sticking.

Step3: Make the sticky sauce

  1. In a small bowl, whisk together soy sauce, hoisin sauce, honey or brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, and the cornstarch slurry.
  2. Set the sauce aside for later.

Step4: Stir-fry the vegetables

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the broccoli, carrots, and bell pepper. Stir-fry for 3–4 minutes until slightly tender but still crisp.
  3. Remove the vegetables from the wok and set aside.

Step5: Cook the beef

  1. In the same wok, add a little more oil if needed.
  2. Add the marinated beef in a single layer. Cook for 2–3 minutes on each side until browned and cooked through.
  3. Remove the beef and set aside.

Step6: Combine and toss

  1. Return the cooked vegetables to the wok.
  2. Add the prepared sticky sauce and bring to a simmer.
  3. Add the cooked noodles and beef, tossing everything together to coat evenly in the sauce.
  4. Cook for another 2–3 minutes until the sauce thickens and clings to the noodles.

Notes

Cooking Notes:

  • Slicing the Beef: For easier slicing, partially freeze the beef for about 15 minutes before cutting.
  • High Heat: Use high heat for stir-frying to achieve a nice sear on the beef and vegetables.
  • Prep Ahead: Chop all ingredients and mix the sauce before starting to cook, as stir-frying is a fast process.
