- 1 egg, beaten

For the Lemon Garlic Yogurt:
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt, to taste
Instructions
Step 1: Cook the Sweet Potato
- Boil the Sweet Potato: In a pot of boiling water, cook the cubed sweet potato until fork-tender, about 10-15 minutes.
- Mash: Drain and let it cool slightly, then mash the sweet potato until smooth in a bowl.
Step 2: Make the Patties
- Mix Ingredients: In a large mixing bowl, combine:
- Mashed sweet potato
- Cooked quinoa
- Breadcrumbs
- Green onions
- Fresh parsley
- Garlic powder, cumin, salt, and pepper
- Beaten egg
- Form Patties: Shape the mixture into small patties, about 2-3 inches in diameter.
Step 3: Cook the Patties
- Heat Oil: In a skillet, heat olive oil over medium heat.
- Fry Patties: Cook each patty for 4-5 minutes per side, or until golden brown and crispy.
- Drain: Remove from the pan and place on paper towels to drain excess oil.
Step 4: Make the Lemon Garlic Yogurt
- Mix the Sauce: In a small bowl, stir together:
- Plain yogurt
- Lemon juice
- Minced garlic
- Salt
- Chill: Let the sauce sit for 5-10 minutes to allow flavors to blend.
Step 5: Serve & Enjoy!
- Serve Warm: Arrange the crispy patties on a plate.
