  • 1 egg, beaten
  • Olive oil, for frying

For the Lemon Garlic Yogurt:

  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt, to taste

Instructions

Step 1: Cook the Sweet Potato

  1. Boil the Sweet Potato: In a pot of boiling water, cook the cubed sweet potato until fork-tender, about 10-15 minutes.
  2. Mash: Drain and let it cool slightly, then mash the sweet potato until smooth in a bowl.

Step 2: Make the Patties

  1. Mix Ingredients: In a large mixing bowl, combine:
    • Mashed sweet potato
    • Cooked quinoa
    • Breadcrumbs
    • Green onions
    • Fresh parsley
    • Garlic powder, cumin, salt, and pepper
    • Beaten egg
  2. Form Patties: Shape the mixture into small patties, about 2-3 inches in diameter.

Step 3: Cook the Patties

  1. Heat Oil: In a skillet, heat olive oil over medium heat.
  2. Fry Patties: Cook each patty for 4-5 minutes per side, or until golden brown and crispy.
  3. Drain: Remove from the pan and place on paper towels to drain excess oil.

Step 4: Make the Lemon Garlic Yogurt

  1. Mix the Sauce: In a small bowl, stir together:
    • Plain yogurt
    • Lemon juice
    • Minced garlic
    • Salt
  2. Chill: Let the sauce sit for 5-10 minutes to allow flavors to blend.

Step 5: Serve & Enjoy!

  1. Serve Warm: Arrange the crispy patties on a plate.
  2. Drizzle with Lemon Garlic Yogurt or serve it as a dipping sauce.
