Preparation:
Step 1: Form and Season Patties
- Divide the ground beef into 4 equal portions. Roll each portion into a ball without overworking the meat.
- Season each beef ball generously with salt and freshly ground black pepper. Let them rest for 5 minutes to enhance the flavor.
Step 2: Heat the Skillet
- Heat a cast-iron skillet or griddle over high heat until it’s smoking hot. A hot surface is essential for achieving the crispy, caramelized crust on the patties.
Step 3: Smash the Patties
- Place each beef ball onto the skillet and immediately press down firmly with a heavy-duty spatula. Flatten the beef into thin patties, about ¼ inch thick. Use parchment paper to prevent sticking, if needed.
- Cook for 2-3 minutes without moving the patties. You’ll notice the edges turning crispy and brown.
Step 4: Flip and Add Cheese
- Flip each patty carefully using a spatula. Add a slice of cheddar or American cheese on top of each patty while it cooks on the second side.
- Cook for another 1-2 minutes, allowing the cheese to melt completely. While the patties are cooking, spoon 1-2 tablespoons of BBQ sauce over each patty for a smoky glaze.
Step 5: Toast the Buns
- While the patties cook, lightly toast the burger buns on the skillet or grill until golden brown. This helps to prevent sogginess when assembling.
Step 6: Assemble the Burger:
- Spread a layer of BBQ sauce on the bottom half of each toasted bun.
- Layer with lettuce, pickles, and sliced red onion for a fresh crunch.
- Place the cheesy smash patty on top of the veggies, followed by two slices of crispy bacon.
- Add more BBQ sauce if desired, then finish with the top bun.
