Instructions
- Make the cannoli shells by mixing flour, sugar, cinnamon, and salt, then adding butter, egg yolk, and wine/water. Knead and refrigerate for 30 minutes.
- Roll out the dough to 1/8 inch thick and cut into 4-inch circles.
- Fry the wrapped dough circles in hot oil until golden brown, about 2-3 minutes, then cool.
- Prepare the lemon filling by mixing ricotta, powdered sugar, lemon juice, lemon zest, and vanilla until smooth.
- Make the meringue by beating egg whites and cream of tartar until soft peaks form, then gradually add sugar and beat until stiff peaks form.
- Assemble the cannolis by filling the cooled shells with lemon filling and topping with meringue.
- Optionally, torch the meringue for a toasted effect.
