Ingredients

  • 1 cup ricotta cheese, drained
  • 1/2 cup powdered sugar

  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Make the cannoli shells by mixing flour, sugar, cinnamon, and salt, then adding butter, egg yolk, and wine/water. Knead and refrigerate for 30 minutes.
  2. Roll out the dough to 1/8 inch thick and cut into 4-inch circles.
  3. Fry the wrapped dough circles in hot oil until golden brown, about 2-3 minutes, then cool.
  4. Prepare the lemon filling by mixing ricotta, powdered sugar, lemon juice, lemon zest, and vanilla until smooth.
  5. Make the meringue by beating egg whites and cream of tartar until soft peaks form, then gradually add sugar and beat until stiff peaks form.
  6. Assemble the cannolis by filling the cooled shells with lemon filling and topping with meringue.
  7. Optionally, torch the meringue for a toasted effect.
