Ingredients

Scale
  • 2 cups water
  • 2 cups uncooked rice
  • 1 (10 oz) can cream of chicken soup
  • 1 (10 oz) can cream of mushroom soup
  • 2 cups cooked chicken, shredded
  • 1/4 cup butter
  • 1 cup milk
  • 1 small white onion, chopped
  • 16 oz broccoli pieces (fresh or frozen)
  • 2 cups shredded Cheddar cheese, divided

Instructions

Step 1: Preheat the Oven and Cook the Rice
Preheat your oven to 350°F (175°C). While the oven is heating up, cook the rice according to the package instructions. Once the rice is ready, set it aside.

Step 2: Mix the Casserole Ingredients
In a 9×13 baking pan, combine the cooked rice and shredded chicken. Add the cream of chicken soup, cream of mushroom soup, butter, milk, chopped onion, broccoli pieces, and 1 cup of the shredded Cheddar cheese. Stir everything together until well mixed. The mixture should be creamy and evenly distributed.

Step 3: Bake the Casserole
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the casserole is heated through and the broccoli is tender.

Step 4: Add the Cheese Topping
During the last few minutes of baking, sprinkle the remaining 1 cup of shredded Cheddar cheese over the top of the casserole. Continue baking for a few minutes, just until the cheese has melted and is bubbly.

Step 5: Let It Rest and Serve
Remove the casserole from the oven and let it sit for 5 minutes before serving. This will allow the casserole to set and make it easier to scoop. Serve hot with a side salad or breadsticks for a complete and comforting meal.

Notes

Cooking Note:

  • You can use leftover rotisserie chicken or any pre-cooked chicken for this recipe.
  • If you prefer more crunch, top the casserole with some crushed crackers or breadcrumbs along with the cheese in the final step.

Serving Suggestions:

  • Serve this casserole alongside a simple green salad or roasted vegetables for a balanced meal.
  • It’s also great paired with garlic breadsticks or dinner rolls for extra indulgence.

Tips:

  • For added flavor, you can sauté the onions in butter before adding them to the casserole.
  • This casserole is freezer-friendly! Prepare the dish, but instead of baking, cover tightly and freeze. When ready to eat, thaw and bake as directed.
