Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a baking dish.
Step 2: For the cookie dough base, mix flour, baking soda, and salt in a small bowl. In a larger bowl, cream together the butter, brown sugar, and granulated sugar until smooth. Mix in the vanilla and egg. Gradually blend in the dry ingredients, then fold in the chocolate chips. Press half of the cookie dough into the bottom of the prepared dish.
Step 3: For the cheesecake layer, beat the cream cheese with sugar and vanilla until smooth. Add the egg and beat just until combined. Spread this mixture evenly over the cookie dough layer in the dish.
Step 4: Crumble the remaining cookie dough over the cheesecake layer, distributing it evenly.
Step 5: Bake in the preheated oven for 25-30 minutes, or until the top is set and the edges are lightly browned.
Step 6: Allow the bars to cool completely in the pan on a wire rack before cutting into bars.
