Line a baking sheet with parchment paper or lightly grease it with oil to prevent sticking. Arrange the chicken thighs and potatoes in a single layer on the baking sheet. Place the baking sheet in the preheated oven and bake for 35-40 minutes. Make sure to check that the chicken reaches an internal temperature of 165°F (74°C) to ensure it’s fully cooked. For extra crispiness, you can broil the dish for the last 2-3 minutes of cooking.

- For added flavor, squeeze a fresh lemon over the chicken and potatoes once they come out of the oven. The acidity from the lemon complements the richness of the Parmesan cheese and adds a refreshing brightness to the dish.
