For the Stir-Fry:

  • 1 lb large shrimp (peeled, deveined)
  • 2 sausages (smoked, Andouille, or kielbasa, sliced)
  • 1 bell pepper (optional for color, sliced)
  • 1 tablespoon olive oil

  • Salt and pepper, to taste

For the Honey Garlic Sauce:

  • 4 garlic cloves (minced)
  • ¼ cup honey
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon rice vinegar (or lemon juice)
  • 1 teaspoon sesame oil
  • ½ teaspoon chili flakes (optional, for heat)

For the Cauliflower Rice:

  • 4 cups cauliflower rice (store-bought or homemade)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Juice of ½ lemon

For Topping:

  • Chopped fresh parsley or basil
  • Lemon wedges

Instructions

Step 1: Prepare the Ingredients

  • Slice the sausage into thin rounds and season the shrimp lightly with salt and pepper.
  • If using bell pepper, slice it into thin strips for a burst of color and extra flavor.

Step 2: Make the Honey Garlic Sauce

  • In a small bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, sesame oil, and chili flakes (if using). Set aside.

Step 3: Cook the Sausage

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the sausage slices and cook for 4-5 minutes until browned on the edges. Remove the sausage from the skillet and set aside.

Step 4: Cook the Shrimp

  • In the same skillet, add 1 tablespoon of butter.
  • Add the shrimp and sauté for 2-3 minutes per side until they turn pink and opaque. Remove from the skillet and set aside with the sausage.

Step 5: Prepare the Cauliflower Rice

  • In a separate pan, heat 1 tablespoon olive oil over medium heat.
  • Add the cauliflower rice and sauté for 4-5 minutes, stirring occasionally, until tender.
  • Season with salt, pepper, and a squeeze of fresh lemon juice for brightness.

Step 6: Combine Shrimp, Sausage, and Sauce

  • Return the sausage and shrimp to the skillet. Pour the honey garlic sauce over them and stir to coat everything evenly.
  • Let the sauce bubble and thicken for 1-2 minutes.

Step 7: Assemble and Serve

  • Serve the honey garlic shrimp and sausage mixture over a bed of cauliflower rice.
  • Garnish with chopped parsley or basil and serve with extra lemon wedges on the side for added zest.
