For the Main Dish:
- 1 lb (450 g) shrimp, peeled and deveined
- 2 sausages (spicy Italian or smoked sausage), sliced
- 2 cups broccoli florets
- 3 tbsp olive oil, divided
- 1 tbsp soy sauce
- Salt and pepper, to taste
Honey Garlic Sauce:
- 3 tbsp honey
- 4 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp sesame oil
- ½ tsp red chili flakes (optional, for heat)
For the Roasted Sweet Potatoes:
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
Instructions
Step 1: Roast the Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread them out in a single layer on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes, flipping halfway through, until golden and crisp on the edges.
Step 2: Prepare the Honey Garlic Sauce
- In a small bowl, whisk together the honey, garlic, soy sauce, apple cider vinegar, sesame oil, and red chili flakes.
- Set the sauce aside for later use.
Step 3: Cook the Sausage
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the sliced sausage and cook for 3-4 minutes, flipping occasionally, until browned and crispy on the edges.
- Remove the sausage from the pan and set it aside.
Step 4: Cook the Shrimp and Broccoli
- In the same skillet, add another tablespoon of olive oil.
- Add the shrimp and season lightly with salt and pepper.
- Cook for 2-3 minutes per side until the shrimp turn pink and opaque.
- Add the broccoli florets and a splash of soy sauce, stirring well to combine. Cook for 3-4 minutes until the broccoli becomes tender but still has a slight crunch.
Step 5: Combine and Add the Sauce
- Return the cooked sausage to the skillet with the shrimp and broccoli.
- Pour the honey garlic sauce over the mixture and toss everything together, ensuring the ingredients are evenly coated.
- Cook for 1-2 minutes, allowing the sauce to thicken slightly and coat the ingredients beautifully.
Step 6: Assemble and Serve
- Serve the shrimp, sausage, and broccoli mixture over a bed of the roasted sweet potatoes.
- Garnish with fresh parsley or a sprinkle of sesame seeds if desired.
