A moist and flavorful quick bread made with ripe bananas and crushed pineapple, topped with a heavenly cinnamon cream cheese frosting.

- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing and flouring it.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and ground cinnamon.
- In a large mixing bowl, combine granulated sugar and vegetable oil, mixing well. Add eggs one at a time, then stir in vanilla extract, mashed bananas, and crushed pineapple.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, checking for doneness with a toothpick.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
- For the frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar, then stir in vanilla extract and ground cinnamon. Adjust consistency with milk as needed.
- Once the bread is completely cool, frost it generously with the cream cheese frosting.
- Slice and serve to enjoy!
