Description

  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing and flouring it.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and ground cinnamon.
  3. In a large mixing bowl, combine granulated sugar and vegetable oil, mixing well. Add eggs one at a time, then stir in vanilla extract, mashed bananas, and crushed pineapple.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in nuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-65 minutes, checking for doneness with a toothpick.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
  8. For the frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar, then stir in vanilla extract and ground cinnamon. Adjust consistency with milk as needed.
