  • 1 lb baby potatoes, halved
  • 2 cups green beans, trimmed

For the Seasoning:

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste

  • Fresh parsley, chopped

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).

Step 2: Prepare the Chicken

  1. In a small bowl, combine olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper.
  2. Rub this flavorful mixture all over the chicken breasts, ensuring they are evenly coated.

Step 3: Arrange the Ingredients

  1. In a large baking dish or sheet pan, place the seasoned chicken breasts in the center.
  2. Surround the chicken with the halved baby potatoes on one side and the green beans on the other side.
  3. Drizzle any remaining seasoning mixture over the vegetables. Toss the potatoes and green beans gently to coat them evenly.

Step 4: Roast

  1. Place the dish in the preheated oven and bake for 25–30 minutes, or until:
    • The chicken reaches an internal temperature of 165°F (74°C).
    • The potatoes are fork-tender and golden brown.

Step 5: Rest and Garnish

  1. Remove the dish from the oven and let it rest for 5 minutes to allow the juices to redistribute in the chicken.
  2. Sprinkle with fresh parsley for a burst of color and freshness.
