Instructions
Step 1: Preheat the Oven
- Preheat your oven to 400°F (200°C).
Step 2: Prepare the Chicken
- In a small bowl, combine olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper.
- Rub this flavorful mixture all over the chicken breasts, ensuring they are evenly coated.
Step 3: Arrange the Ingredients
- In a large baking dish or sheet pan, place the seasoned chicken breasts in the center.
- Surround the chicken with the halved baby potatoes on one side and the green beans on the other side.
- Drizzle any remaining seasoning mixture over the vegetables. Toss the potatoes and green beans gently to coat them evenly.
Step 4: Roast
- Place the dish in the preheated oven and bake for 25–30 minutes, or until:
- The chicken reaches an internal temperature of 165°F (74°C).
- The potatoes are fork-tender and golden brown.
Step 5: Rest and Garnish
- Remove the dish from the oven and let it rest for 5 minutes to allow the juices to redistribute in the chicken.
- Sprinkle with fresh parsley for a burst of color and freshness.
